You may remember this spicy cucumber salad when it went viral on TikTok a few months ago. It was all over social media! Now that it is summer and we are really feeling the cucumber, we wanted to give it a try and we think you should too. Check out this blog for an easy to follow authentic spicy cucumber salad recipe. 

Japanese Carrot Ginger Dressing

Dietitians are just regular people which means sometimes we may feel a little lazy or are simply busy so we opt for prepared or packaged items from the store. When it comes to salad dressings, store bought dressings are convenient, they have a longer shelf life, and there are usually a ton of decent options. With that said, we are loving this homemade dressing and think it is pretty quick to make. We also like that it can all be thrown in a blender which means less dishes to clean. Pro tip: This is technically a salad dressing, but we have also used it as a veggie dip!

Chinese Garlic Green Beans

We love these green beans as a hot side dish with dinner and think they go well alongside any protein. Traditionally this dish is prepared deep-fried, but for clients who may be needing to cut down on calories this blogger's method of pan-frying rather than deep-frying may be preferred.




Viral Sweet Pepper & Cucumber Salad

Another recipe that recently went viral is this sweet pepper and cucumber salad with ginger dressing and chili oil. We like this recipe because it is easy to make, easy to prep in advance and only has five ingredients. We have tried this recipe as a side dish, and have also made it with shrimp for a complete meal. Both were great! Pro tip: this dish is served chilled.
