What to Eat For Breakfast for Weight Loss | Easy Meal Prep Ideas for Breakfast

Breakfast Casserole

A breakfast casserole is a great way to get in your veggies and protein. We think this recipe is a great one, but feel free to use it as a guide and add or eliminate certain vegetables. Sometimes we like to add turkey bacon to ours! We have found the easiest way to meal prep this item is to bake it and store it in the same container. Any oven safe bakeware that comes with a lid will do, but these Pyrex dishes are our go-to. Pro tip: be sure to let the casserole completely cool prior to placing the lid.

 
 

Chia Pudding

This recipe is from one of our own TMN dietitians @yourfavoriterd on Instagram. We recommend preparing the recipe a night in advance for you to enjoy over the next two days. Pro tip: top with fresh fruit and a scoop of peanut butter!

  • 2 cups unsweetened almond milk

  • ½ cup chia seeds

  • 1 tsp vanilla extract 

Directions: Stir, refrigerate overnight, add toppings and enjoy. Recipe yields two servings.

Overnight Oats

This is another favorite from our dietitian at @yourfavoriterd. Like the chia pudding, we recommend making this a day in advance and eating over the next two days. For a meal that will fill you up, try adding fresh fruit, crushed nuts, and a scoop of granola.

  • ½ cup Greek yogurt

  • ½ cup unsweetened oat milk

  • ½ tsp vanilla 

  • 1 tsp cinnamon 

  • 2 tsp chia seeds

  • ½ cup rolled oats

Directions: Stir and refrigerate overnight. Recipe yields two servings.

Muffins

We like muffins as a make-ahead breakfast item because you can freeze them. You can use any muffin recipe, but this is one of our favorites because it calls for whole wheat flour. If you plan to toss these in the freezer, allow the muffins to completely cool before placing them in a gallon sized freezer ziploc bag. When ready to eat, pull one out and pop it in the microwave for a warm breakfast that goes great with a high protein item like greek yogurt or turkey sausage. Pro tip: if you are being mindful of added sugars use half a cup of sugar rather than the full cup the recipe calls for.

 
 

French Toast
Believe it or not, French toast freezes and reheats pretty well. We like to take half a loaf of our favorite whole wheat bread and make french toast to last the entire week. The trick to meal prepping this item is to allow the french toast to completely cool prior to storing. To store for the week you can place the french bread in a container in the refrigerator and it will last several days. If you would like it to keep longer we recommend placing it in a freezer mold and storing it in the freezer.
