What to do With Holiday Leftovers

Chicken Noodle Soup

Utilize some of that leftover turkey by swapping out the chicken for turkey in this chicken noodle soup recipe. Not only does it eliminate leftovers, but it is the perfect comfort food during these chilly months. If you are trying to amp up your produce intake, we recommend doubling up on the vegetable portions in this recipe. If you do opt to increase the veggies in this recipe, you may consider increasing the broth to your liking.


Chicken Salad

Perhaps you have made the above recipe and still have leftover turkey. Check out this chicken salad recipe and simply swap out the chicken for turkey. This salad goes great on sandwiches or over salads for lunch and is a great prep-ahead meal. 


Breakfast Sandwiches

One of our favorite things to do with leftover holiday ham is to prepare make-ahead breakfast sandwiches. We like to add the ham to a whole wheat english muffin, along with an egg. From there we wrap them individually in foil and freeze them. When we are in a pinch, we can grab them out of the freezer and toss them in the microwave for a quick high protein meal. Don’t forget about your produce goals and be sure to add a side of fruit for a fully balanced healthful meal.


Avocado toast

Summer may be over, but it is never too cold to whip up a slice of avocado toast. Toast a slice of  bread, add your mashed avocado, the leftover holiday ham and get creative with your toppings. Our favorite is a lightly toasted sourdough bread, avocado, arugula, a slice of ham and an over easy egg- yum!
